La Pastora isn't one farm, it's a whole community. Coopetarrazú has been around since 1960, started by a couple hundred small growers in Tarrazú who wanted a fairer shake than the big producers were giving them. Today it's grown to thousands of members, most farming four hectares or less, and every afternoon trucks roll in from across the region loaded with that day's cherries. The co-op runs a tight process start to finish, which is why this bean shows up clean and consistent harvest after harvest. It's citrusy and bright without being sharp, one of the easiest cups on our list to fall in love with.
